Roasted Red Pepper Breakfast Panini

A breakfast panini with roasted red peppers, eggs, provolone cheese, and fresh baby spinach that tastes great and fills you up. Great for a quick and tasty breakfast in the morning.

Ingredients:

  • 4 slices of ciabatta bread

  • 4 large eggs

  • 1/2 cup roasted red pepper strips

  • 4 slices of provolone cheese

  • 1/4 cup fresh baby spinach leaves

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

Preheat a panini press or a grill pan


In a small skillet, heat 1 tablespoon of olive oil over medium heat


Crack the eggs into the skillet and cook to your desired level of doneness, seasoning with salt and pepper


While the eggs are cooking, brush the outside of each slice of ciabatta bread with the remaining olive oil


Place a slice of provolone cheese on each slice of bread, followed by the roasted red pepper strips, cooked eggs, and baby spinach leaves


Top with the remaining slices of ciabatta bread


Place the sandwiches in the preheated panini press or grill pan and cook until the bread is toasted and the cheese is melted about 3-5 minutes in a panini press or 2-3 minutes per side on a grill pan


Remove the panini from the press or pan, let them cool for a minute, then cut them in half


Serve your Roasted Red Pepper Breakfast Panini hot and enjoy!
