Soft Oatmeal Coconut Raisin Cookies

Indulge in these soft and chewy oatmeal cookies loaded with coconut goodness and sweet raisins. Ideal for a cozy treat!

Ingredients:

  • 1 cup rolled oats

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup shredded coconut

  • 1/2 cup raisins

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet


Put the flour, baking soda, cinnamon, salt, and rolled oats in a bowl and mix them together


Place the softened butter, brown sugar, and granulated sugar in a different bowl


Mix them together until they are light and fluffy


Add the egg and vanilla extract and mix them in well


Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined


Add the shredded coconut and raisins and mix them into the dough so that they are spread out evenly


Drop spoonfuls or cookie scoops of dough onto the baking sheet that has been prepared


Use the back of a spoon to gently press down on each ball of cookie dough


After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden


Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way

Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients


Mix until well combined


Pour in the boiling water and stir until the batter is smooth


It will be thin, but that's okay


If desired, fold in the semisweet chocolate chips


Divide the batter evenly between the prepared pans


Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean


Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely


Once cooled, you can frost and decorate your chocolate cake as desired
